Tea Party Preparations (Part 2 )

I approached the tea party like I was planning a military coup. Lists, lots of lists. Shopping, cooking, packing.

The Recipes: 

Thawing peas while thinly slicing English cucumbers. I place them on parchment paper, sprinkle with salt and layer over night. In the morning - dry on paper towels, top and bottom and put on crustless bread and butter.

I have not made Pea Salad in such a long time that I had to look up a recipe. This is not my mom's recipe because she added water chestnuts, but this was fabulous! I plan to make it often! 

Peas, bacon, red onion, cheese, butter and sugar. So good. And so cute in a tiny bowl. I made a sample. 
To prove my OCD craziness, here are the heart shaped cookies cooling while I check the bottoms for two dozen with perfect browning. 

The Carrot Cake Sandwiches. This is a recipe from Tea Time magazine that I have been making for years. Cream cheese, powdered sugar, grated carrots and raisin bread. 

I make them a day ahead and wrap in plastic wrap to put in the frig. Before serving I cut them into strips with my electric carving knife (that I use to take crusts off the cucumber sandwiches, too). 

Adding a thick layer of grated carrots. 

Ready to be wrapped. These are always a crowd favorite.

How is the list coming?
Baked, frosted and sugared cupcakes. I added the fruit right before serving. 

I used a new recipe for mini cheesecakes and they were a total failure. Luckily we had way too many other desserts.

Perfect temperature for an outdoor tea party! This was on my way home.

  1. I absolutely love tea but have never had a tea anything like this! I should perhaps go to the Queen Elizabeth Hotel here in Montreal sometime for tea, apparently it is very good! Your photos, dear Miss Merry, and all the goodies featured in this tea are just amazing!

  2. My mouth is drooling over those grated carrot sandwiches. This is all just amazing and wonderful. I can't believe how much work you put into all of this, this should be part of a big magazine spread that specializes in fine dining and gourmet foods! Hack, even Good Housekeeping would love to get their hands all of this in older days! Nice work, Miss Merry. πŸ™‚

  4. I can understand why you needed lists! So much work, but so worth it. I would love some of these recipes, especially the pea salad. Maybe you could do a post with the recipes.

  8. You, my friend, are an overachiever. I said that for the first time when you planned your "cruise". Remember that? I am awed by this. I'm sure your granddaughter appreciated the time and effort thought and that makes it all worthwhile.
    My favorite summer salads are pea salad and broccoli salad. They are both SOOOO good and yours looks delicious.

  10. I have only done three tea parties and I loved it....and let me stress, when I say "DONE", I meant attended. My days of doing went bye, bye years ago. Carrot Cake sandwiches.....WOW, never in my day have I heard of that but I love a great carrot cake and it has been forever since I made one. I have a grandson, can not physically eat choc, he gets sick, but he loves carrot cake, he has a bday coming up in Nov.....might just have to make him one.
