Saturday

Hot and Hazy morning as we followed this guy down some country roads to the egg barn.

Macaroni Salad and Deviled Eggs for the 4th cleaned me out.  I got four dozen.

I resisted the baked goods.

And the pies in the refrigerator (only $10).

Came home to find my projects from last weekend were delivered.

Today's harvest - zucchini.

I straightened up the pantry and don't know where I put my little food processor so I couldn't grate them. I saw this on facebook. I sliced them and let them dry on paper towels.

Then I put them on parchment paper and popped them in the freezer. Tonight I will pull them out and put them in ziplock bags.

First bag of tomatoes.  I learned this on facebook too.  I wash them, core them and freeze them in a ziplock. (No more blanching).  When they thaw, the skin falls off. One bag is enough for my small sauce recipe for dinner.

103 degrees at 3:40.  We went out for ice cream.  And spoiled our dinner.

And four deer at the neighbor's backyard eyeing his garden.

Now I have my feet up in the air conditioning and I am looking at the supplies for my summer camp for my grandchildren. It is a little overwhelming, lol.

  1. Our dinner company just left and I have my feet up too. I wish I had known that about freezing tomatoes. I always blanched and boiled them. I always grated the zuchinni and froze it in 2 cup amounts. It seems most of my baking recipes needed two cups of zuchinni. I miss having it in a garden. The stores zuchinnis are so tiny.
It's hot and humid here too and the fireworks are crazy tonight again. I sure hope they don't go until 1:30 like they have been. How in the world can people afford this
    Blessings,

  2. So, you're in the Triple Digits too, Fun Times, huh? It wasn't as crazy Hot today but it was Humid coz we're in Monsoon Season now... so, ugh! Good Ideas for Freezing fresh Foods that are perishables. I just bought some Zucchini and Summer Squash {Yellow and Mexican Grey}. We've been eating a lot of it Steamed lately since I'm on this Low Carb Diet. Nobody else seems to mind eating it with me, The Son made Steak and Red/Yellow/Green Pepper Kababs on the BBQ for us to eat for Dinner today. The Egg Barn looks like a place I'd love to have to shop at.

  3. Miss Merry, YOU are overwhelming... but I love your pics (I would have had a hard time skipping those pies).

  4. I did that with my tomatoes and it works great. Will follow your lead on the zucchini! Time for me to start getting my veggies at the Farmer's Market. The prices went up but I don't have any time for doing a garden for us [I do for flowers though!].
We see those sprayers all of the time out here in rural land.

  5. Yikes - that is too hot!
You've been busy - you are making me tired. I saw that tomato tip too. I hope it works as well as they say it does.

  8. How did it work out to freeze the zucchini like that? I've chopped and frozen it before, but just in one big lump.

    1. Well, I did remember to put them in a ziplock before I went to bed. They froze firm like cookies. We like zucchini slices sauteed in butter with onions so that is probably what I would use them for since I bet they will be mushy. I hope I find my food processor to shed the rest for bread and such!

Thank you so much for stopping by to visit! I love your comments and suggestions and read them all. Due to spam, I will now have to approve all comments. Sometimes it takes me a hot minute to authorize comments due to grandchildren commitments. I apologize but I can't let those scammers get the upper hand!
